I can’t decide what these were…. they started from a cookie recipe which I changed. I baked them in a 13 by 9 pan to make bars instead of cookies. And they taste like banana bread. So there you go…. Banana Bread Cookie Bars!
Since I changed the recipe quite a bit I’d like to share it for all who’d like to give it a try!
1 cup mashed banana
4 T ground flax
1 tsp vanilla
2 cups whole wheat flour
1/2 cup rolled oats
1 tsp baking soda
1/4 tsp salt
1/2 cup sugar (you can probably reduce this to 1/4 cup or use stevia instead if you want an even healthier treat)
3/4 cup chocolate chips (raisins and nuts would be good here, too, or carob chips)
Mix flax and vanilla together with the mashed banana (this subs for the eggs and oil in the original cookie recipe and also adds sweetness). Mix together dry ingredients. Add in banana mixture and mix well. Fold in chocolate chips (or other additions). Pour (or plop, it will be a rather thick batter) into a greased 13 by 9 inch pan. Bake at 350 degrees Farenheit for 20 minutes or until golden brown on top.
Svara had lots of fun helping me mash the bananas, and of course taste testing the batter!
