Vegan Spaghetti Pizza Casserole


It took me awhile to get into using pinterest, but now it’s my favorite place to post recipes that I see that I want to try!  A couple weeks ago I saw this spaghetti pizza casserole that looked so good!  It’s not a vegetarian recipe, but I knew I could make it into one!  So last week I gave it a try and here is mine:

I didn’t follow a precise recipe, but this is basically what I used:

cooked pasta (I used approximately 1/2 lb of spiral noodles)

1 lb. tofu ricotta (I use the recipe in Veganomicon but any recipe will do)

leftover basil pesto (about 1/4 cup)

1/2 cup sauteed mushrooms

1 jar spaghetti sauce

chopped olives

2 cups “cheese” sauce – I used the melty white cheese recipe in The Ultimate Uncheese Cookbook

Mix the spaghetti sauce with the pasta.  Place half into the 2L casserole dish.  Top with tofu ricotta, then the pesto and mushrooms. Top with the rest of the pasta, then the cheese sauce and olives.  This cheese sauce was the perfect topping, it turned out melty, but got crusty like dairy cheese on the edges.  A tasty casserole indeed!

Svara didn’t like it much, but that’s no surprise.  She much prefers more simple meals.  I loved it, though, and will definitely make it again!
